The skewers can be prepared in advance. They cook very quickly so are an ideal dish to cook first: your guests can be munching on these while everything else cooks. Your guests will sure love the Arugula pesto! – Jen
6 Qualicum Beach Scallops (foot removed)
6 Spot Prawns
1 Cup Arugula Leaves
1 clove Garlic (minced)
¼ cup Olive Oil
¼ cup Parmesan
2 Tbsp Toasted Pine Nuts
Salt and Pepper
- Preheat Grill
- Make Pesto: combine Arugula leaves, garlic, olive oil, parmesan and toasted pine nuts in food processor. The pesto should be a paste consistency.
- Skewer scallops and prawns, 3 of each on the skewers. Season the skewers and drizzle with a little olive oil,
- Grill skewers for 2-4 mins a side depending on their size.
- Place skewers on plate and serve with Arugula pesto.
