This dish is Classic, makes a wonderful first course for group, or maindish for 2. This dish can be made with any type of fish you love, the aroma of all the fresh fish is amazing. – Jen
1 lb of Mixed Shellfish (Clams, Prawns, Scallops and Mussels)
5 cups Water
1 cup Onion (sliced)
1 cup Carrot (sliced)
1 cup Celery (sliced)
2 cloves Garlic (sliced)
2 Tbsp Ginger (chopped)
2 pods Star Anise
1/2 tsp Cloves
1 tsp Peppercorns
1 tsp Coriander Seeds
¼ cup Soy Sauce
½ cup White wine
- Make Vegetable broth first. Place water, vegetables, garlic, ginger, spices, wine and soy sauce in a large pot. Bring to a boil and simmer for 1 hour or more until the flavor is developed. Then strain the broth through a fine sieve. (This can be made ahead of time.)
- Bring broth to a boil. Add shellfish starting with scallops or clams which will need longer to cook. Cover and cook for 2 mins.
- Next add mussels and prawns. Cover and cook for an additional 2-3mins.
- Use a slotted spoon to place shellfish in bowls. Ladle broth into bowls.
